Many of you have requested recipes from Isaiah's Place. We are honored to share them. Enjoy!

 

 

Chicken Enchiladas ( Diane)                                                                                        Taco Soup (Susan)

        Mix together:                                                                                                                    2 lbs hamburger (season as desired, brown & drain)

2 cans diced chicken or (boiled, boned chicken)                                                                          2 cans kidney beans        

2 cans Cream of Chicken Soup                                                                                                  2 cans pinto beans 

1 large can green chilies (or Rotel)                                                                                             1 can corn (drained) 

6-ounce can Carnation Milk                                                                                                       1 can hominy (drained)

1 Pkg shredded Monterey Jack Cheese                                                                                      1 pkg Taco Seasoning                      

            (Set aside some to sprinkle on top)                                                                                1 pkg Ranch dressing mix            

                                                                                                                                               2 cups water 

Layer in a baking dish with:                                                                                                        1 Can Rotel tomatoes and green chilies   

1 package of flour tortillas                                                                                                          Bring to a boil and simmer for one hour.

Sprinkle remaining cheese on top.

 

Bake at 350° until bubbly and melted.

(Can be served with sour cream, black olives, or guacamole.)

Southwest Sandwiches (Felicia Johnson)

Dressing:

1 cup Mayo

1/2 small can ripe olives - chopped

6 Tablespoons fresh cilantro (substitute 3 T. dried if fresh is not available)

Cajun Spice - sprinkle and add as desired

 

Sandwich:

                                Use desired ingredients - bread, turkey, cheese, tomatoes, sprouts, onion, avocados, etc.

                                Spread dressing on both pieces of bread, build sandwich as desired, place in oven on 250 degrees for about 15 minutes until heated through.

                              Sweet and Sour Cucumbers (Carlene Pesko)                                    Dutch Hats

                                   

                                7 cups cucumbers (peeled and sliced)                                                     Serves 4-6

                                1 cup onions (sliced into rings)                                                                   3 T butter (place in pan in oven while preheating 425°

                                1 tbsp. salt                                                                                                    1 cup pastry flour

                                 Add:                                                                                                              1/2 tsp salt

                                 1 cup white vinegar                                                                                     1 T honey
                                 1 tsp celery seed                                                                                         5 eggs
                                 1 tsp mustard seed                                                                                      1 cup milk 

                                 2 cups sugar                                                                                                 Wisk all ingredients until blended

                                 Stir and put in air tight container for 3 days                                               Pour batter in hot pan, bake 25 minutes
                                 Will keep for months in refrigerator or freeze.                                           Cut into pieces, serve with fruit, syrup, yogurt, honey
